Vegetable Chile

材料 :
- 2 tbs olive oil
- 1 green bell pepper, seeded and cut into ? inch pieces
- 1 red bell pepper, seeded and cut into ? inch pieces
- 1 large carrot, chopped
- 1 jalapeno pepper, seeded and minced
- ½ pound dried lentils
- 1/3 cup tomato paste
- ½ 15-ounce can red kidney beans
- ½ 15-ounce can pinto beans
- ½ 28-ounce can stewed tomatoes
- 1 teaspoon chili powder
- 2 teaspoons ground cumin
- salt
- black pepper
作法 :
- In a large soup pot, heat olive oil over medium heat. Add green bell
pepper, red bell pepper, carrot, and jalapeno pepper. Cook until soften, about
3 minutes. Stir in 3 ½ cups water and other ingredients. Stir to blend.
- Bring to boil. Reduce heat to medium low, cover and simmer, about 25-30 minutes. If the chili starts to dry out, add water needed.
