1 green bell pepper, seeded and cut into ? inch pieces
1 red bell pepper, seeded and cut into ? inch pieces
1 large carrot, chopped
1 jalapeno pepper, seeded and minced
½ pound dried lentils
1/3 cup tomato paste
½ 15-ounce can red kidney beans
½ 15-ounce can pinto beans
½ 28-ounce can stewed tomatoes
1 teaspoon chili powder
2 teaspoons ground cumin

In a large soup pot, heat olive oil over medium heat. Add green bell
pepper, red bell pepper, carrot, and jalapeno pepper. Cook until soften, about
3 minutes. Stir in 3 ½ cups water and other ingredients. Stir to blend.
Bring to boil. Reduce heat to medium low, cover and simmer, about 25-30 minutes. If the chili starts to dry out, add water needed.
