Baked Mochi

材料:
- 1 16-ounce box mochiko(sweet rice flour)
- 2-1/2 cups sugar
- 1 tsp baking powder
- 2 cups water
- 1 12-ounce can coconut milk
- 1 tsp vanilla
- few drops Red or Green food color
作法:
- Preheat oven to 325 degrees.
- Mix dry ingredients in large mixing bowl.
Add water and coconut milk gradually until well mixed.
- Add vanilla and a few drops of food color.
- Pour into greased 9-by13-inch pan. Cover tightly with foil.
- Place pan in center of oven. Bake for one hour. Uncover and cool for several hours.
- Cut into pieces for service.
附註:
- 9X13 盤子底抹一點油,有助於拿出烤好的成品,
- 糯米粉留一部分,或另外準備一些麵茶粉,切塊後撒上,以免黏在一起。
- 冰凍後再切,比較容易切,一面切,一面撒粉。切好放到回復室溫,既可享用。
